Swiss Water Decaf Process is an environmentally friendly, chemical-free way to create 99.9% caffeine-free beans while maintaining the bean’s distinctive origins and flavor profile. This non-solvent method was introduced in 1979 by Coffex and is not so called because the water itself is Swiss, but instead because the process was developed in Switzerland.
In this process, the coffee beans are soaked in hot water, allowing the caffeine to be extracted from the bean and into the water. The water is stripped of its caffeine, not by a solvent, but by percolation through activated charcoal. The beans are returned to the hot water, where they reabsorb the remaining, caffeine-free flavor characteristics. The coffee beans are then dried to their original moisture level and sold as fully processed green beans to be roasted by each individual roaster.
