If you think “coffee from India” sounds strange, wait till you hear about the West Ghats mountain range. A UNESCO World Heritage Site, it’s one of the most biodiverse places in the world, with over 5,000 flowering plants and 50,000 species of birds. One of the rarest of all, the Neelakurini flower, blooms only once every twelve years.
Legends suggest that the first cultivated coffee was brought to India from seven raw beans originating in Mocha, which were brought by a Sufi holy man on his pilgrimage to Mecca in 17th century. However, our bags did not magically arrive at Pagi. Instead, it originates from small-scale farms, with each farm averaging just a few acres of cultivated coffee, bananas, avocado, orange, and pepper. Each farmer operates their own mill, which distributes the coffee cherries, sorting them, depulping them, fermenting them, washing them, and drying them on patios before storing them in cool dry rooms. Finally, the parchment is ready for milling and export.
